A champon originating in Hikone, Shiga Prefecture, in which plenty of vegetables are simmered in a Japanese-style soup of bonito and kombu dashi

Dish profile

About this dish

Main ingredients
Medium-thick noodles, vegetables, bonito, kombu
History and origin
It is said to have been created by the owner of an eatery that opened in 1963 on Hikone's Ginza shopping street, inspired by Nagasaki champon eaten while traveling. It spread to eateries and Chinese restaurants in the city, and since the 1990s it has also been offered by a chain under the name "Omi Champon."
How it is eaten
The ingredients are simmered in the soup without being stir-fried, and seafood is usually not included. Adding vinegar to the soup partway through to change the flavor is said to be standard.
