Dish profile

About this dish

Main ingredients
cha soba (green tea soba), beef, egg
History and origin
It is said to have been devised in 1961 by an establishment then in the inn business, as a specialty of Kawatana Onsen. It is said to have been inspired by an elder's story that Satsuma soldiers in the Satsuma Rebellion (Seinan War) grilled meat and wild plants on roof tiles to eat, together with an anecdote that people at Kawatana Onsen grilled various things on tiles to eat.
When it is eaten
Because it can be made easily on a hot plate and looks attractive, it is often eaten when people gather at someone's home.
How it is eaten
Grilled cha soba is placed on a heated tile and topped with beef, kinshi tamago (shredded thin omelet), small green onions, nori, and lemon topped with momiji oroshi (grated daikon with chili), and served with noodle dipping sauce. At home it is made in a frying pan or on a hot plate.
