Dish profile

About this dish

Main ingredients
dark soy sauce (koikuchi shoyu), tamari soy sauce, gara soup (bone stock)
History and origin
It is said to have originated from the chuka soba (Chinese-style noodle soup) that an eatery in the city began serving around 1917 (Taisho 6). Its black soup became known after being featured on television and elsewhere as "Koriyama Black," and in fiscal 2023 (Reiwa 5) it was certified by the Agency for Cultural Affairs under the "Modern 100-Year Food" category.
How it is eaten
There are two types: "Koriyama Classic Black," in which the soy sauce tare and gara soup are combined in a stockpot or pan, and "Koriyama Neo Black," in which they are combined in the bowl. Despite its black appearance, it is said to taste mellow.
