Dish profile

About this dish

Main ingredients
rice, seasonal fish and vegetables
History and origin
In the Edo period, when the lord of the Okayama domain issued a frugality decree that "commoners shall have one soup and one side dish," commoners reasoned that fish and vegetables used as sushi toppings were not side dishes, and are said to have mixed more than ten kinds of seasoned ingredients into sushi rice to eat it.
When it is eaten
A festive dish for entertaining guests at spring and autumn festivals, celebrations, Obon and Buddhist memorial services. Seasonal ingredients are used, such as Spanish mackerel and bamboo shoots in spring and matsutake mushrooms in autumn.
How it is eaten
Seasoned vegetables and seafood are mixed into vinegared rice, and well-shaped pieces are arranged on top. It can also be eaten as "nukuzushi," steamed to warm it.
