Dish log

A mildly spicy, soy sauce-based ramen from Tenri, Nara Prefecture, with vegetables, mainly napa cabbage, and a strong hit of garlic
Dish profile
About this dish
- Main ingredients
- Noodles, napa cabbage, garlic chives, carrot, white leek, garlic, pork belly, pork bones, chicken bones, soy sauce tare, lajiang (chili sauce), chili oil
- History and origin
- A shop headquartered in Tenri is said to be the originator of stamina ramen, and it reportedly opened as a street stall in Nara Prefecture in 1968. In 1999, another chain filed a trademark application for the name "Tenri Stamina Ramen," and it is said that this is also why other shops could no longer use the name.
- How it is eaten
- The stir-fried toppings are combined with soup and tare and poured over boiled noodles. At the shop regarded as the originator, customers can also bring their own container for the soup and take it home with the noodles.
