Dish profile

About this dish

Main ingredients
beef belly, onion, sweet-savory soy-based sauce (some restaurants also add green pepper, carrot, cabbage, bean sprouts, and shimeji mushrooms)
History and origin
It is said to have been born in Misawa City shortly after the war and to have spread to Towada City, which shares the same cultural sphere. One theory holds that the background was the U.S. military's cheap disposal of beef belly. Bara-yaki, long loved locally, was branded as "Towada Bara Yaki" in 2009 (Heisei 21), with the citizens' group Towada Bara-yaki Seminar leading the promotion.
When it is eaten
As Towada's soul food, it is offered by many restaurants, and it is also made at home using store-bought sauce or each family's own sauce.
How it is eaten
It is stir-fried on an iron griddle while being coated in the sauce, and cooked down until the onions turn amber before eating.
