Dish profile

About this dish

Main ingredients
myoga, ryukyu (hasuimo stems), konnyaku, bamboo shoots, shiitake mushrooms, turnip, shihochiku (square bamboo), rice, etc.
History and origin
A ceremonial food handed down in the mountainous areas of Kochi Prefecture, it is said to have begun with making sushi from mountain ingredients in times when kombu and nori were hard to obtain. It is served at "okyaku" banquets and is also one of the dishes of sawachi ryori.
When it is eaten
It appears as a ceremonial food at weddings, funerals and festivals, and in bento for outings. In the prefecture it can easily be bought at supermarkets and elsewhere, and it is enjoyed as an everyday food.
How it is eaten
Sushi rice made with yuzu or other citrus is shaped by hand and topped with ryukyu and myoga pickled in sweet vinegar, sweetly simmered shiitake and so on. For konnyaku sushi, a slit is cut in the inside of the konnyaku and it is eaten like inari-zushi.
