Dish profile

About this dish

Main ingredients
Mature hen (meat and bones), soy sauce, thin straight noodles, green onions, chikuwa (tube-shaped fish cake), raw egg, takuan (pickled daikon)
History and origin
It is said to have originated at an eatery that opened in Susaki shortly after the war, beginning with deliveries in enamel pots so it would not get cold; in recent years these have been replaced by clay pots. In 2002, volunteers from the chamber of commerce and industry, the city office, and others began an effort to promote it as a Susaki specialty.
When it is eaten
In Susaki, it is served day and night at everything from specialty shops to eateries, okonomiyaki shops, yakiniku restaurants, and izakaya. Some people buy noodles and soup at shops and make it at home in a clay pot.
How it is eaten
It is served still boiling in the clay pot, and the hot soup is enjoyed to the very end. It comes with pickles such as takuan, and many people also order rice with it.
