Dish profile

About this dish

Main ingredients
pork bones, chicken bones, vegetables, medium-thick noodles made without kansui (alkaline water), locally made, strongly sweet soy sauce
History and origin
The first proprietress of a ramen shop in Kagoshima City founded in 1947 is said to have learned how to make ramen from a Chinese person she had nursed in Yokohama before the war, and for this reason it is said not to have been influenced by Kurume tonkotsu ramen. Having had miso ramen from an early period is also regarded as one of its characteristics.
How it is eaten
Soft-ish straight noodles are served in a semi-cloudy or clear tonkotsu broth with plenty of vegetables and other toppings. Many shops serve tea along with vinegar-pickled daikon or takuan (pickled daikon), and customers eat the pickles while waiting for their ramen.

Recipes vary by region and household. This is not ingredient, allergy, or dietary guidance for a specific restaurant.
