Dish profile

About this dish

Main ingredients
Bone-in young chicken, chicken liver and gizzard, seasonal vegetables, tofu
History and origin
It is said that a Chinese-style dish of chicken simmered in a lightly salted broth spread in Nagasaki, where foreign ships called, and fused with elements of Western soup and Japanese cuisine to become a dish unique to Fukuoka. It is handed down that the men of the Hakata Gion Yamakasa may have chosen chicken to build up their strength.
When it is eaten
Eaten year-round with vegetables of each season. It is said to be always eaten at the naorai (post-ritual feast) of the Hakata Gion Yamakasa.
How it is eaten
Chicken, vegetables of choice, tofu, and so on are cooked and eaten with a mix of ponzu and soy sauce, with momiji-oroshi (grated daikon with chili), grated ginger, green onion, yuzu, and the like added to taste. Mochi, udon, or rice is sometimes added at the end.
