Dish profile

About this dish

Main ingredients
flat noodles, meat miso, cucumber, green onion
History and origin
It is said to have been created when the founding owner of "Pairon," who had emigrated to the former Manchuria before the war, opened a food stall in Morioka after the war based on the zhajiangmian he had tasted there, and repeatedly adapted it to suit Morioka tastes. It is counted as one of Morioka's three great noodle dishes, along with wanko soba and Morioka reimen.
When it is eaten
As one of Morioka's three great noodle dishes, it is recommended as a specialty to try when visiting Morioka.
How it is eaten
Hot, freshly boiled noodles are topped with meat miso, garnished with cucumber and green onion, and mixed with garlic, ginger, chili oil, or vinegar to taste before eating. To finish, an egg is cracked into the emptied bowl and meat miso and noodle cooking water are added to make "chitantan."
