Dish profile

About this dish

History and origin
It is said to have originated in the Nishiyama area of Kamiminochi District, and in mountain areas unsuited to rice growing it sustained people as a meal made with wheat and buckwheat flour. In the past, 'hai-yaki oyaki,' steam-baked in the ashes of an irori (sunken hearth), was the main type, and as it spread to towns various cooking methods such as steaming and grilling emerged. Originally a local food of the northern part of the prefecture, it has now spread throughout the prefecture.
When it is eaten
Eaten both on special occasions and in everyday life, and also made as a snack with seasonal fillings. It is indispensable at Obon in the Hokushin region, where it is offered at the Buddhist altar on the morning of August 14.
How it is eaten
Grilled, the wrapper becomes crisp; steamed, it becomes soft and chewy. The dough ingredients, cooking methods, and fillings vary by region and household.
