Dish profile

About this dish

Main ingredients
flying fish (ago), local alcohol (shochu or sake; formerly jidenshu)
History and origin
It is said to have begun as a preserved food made by grinding flying fish into surimi and grilling it. The name "ago" appears in documents from more than 400 years ago and is also said to come from the fish being so delicious that your jaw (ago) drops. In Tottori Prefecture it is made from the central part of the prefecture westward and is also called ago chikuwa.
When it is eaten
It is enjoyed as a taste of summer around May-September, when flying fish are caught, and is also popular as a souvenir. In Tottori Prefecture it is also served as a snack with drinks at banquets.
How it is eaten
It is torn by hand or bitten into whole and savored along with the toasty aroma of the grilled skin. Besides being dipped in wasabi soy sauce or ginger soy sauce as a snack with drinks, it is used as an ingredient in clear soups and for making dashi.
