Dish profile

About this dish

Main ingredients
Pork (loin or belly), rice, green onion, sweet soy sauce glaze
History and origin
The raising of pigs by the Banseisha, a Tokachi pioneering company, is said to be what made the area one where pork is eaten, and pig farming began in Tokachi around the end of the Meiji era. It is said to have originated in the early Showa era when an eatery in Obihiro grilled familiar pork over charcoal instead of expensive eel and made it into a rice bowl with a kabayaki-style sauce.
When it is eaten
It is eaten year-round by a wide range of generations as a home dish, and it is also widely served at restaurants in the Tokachi region.
How it is eaten
Grilled pork is coated in the sweet soy sauce glaze and placed on rice, the remaining sauce is drizzled over it, and finely shredded green onion is placed on top. Green peas are sometimes added, and grilling over charcoal makes it even more fragrant.
