Dish profile
About this dish
- Main ingredients
- udon, gomadashi
- History and origin
- "Gomadashi" is a traditional seasoning long used in everyday cooking in Saiki City. Its origin is uncertain, but it is said to have been made to process large catches of fish, or to save fishermen's wives the trouble of making dashi. Locally it is most commonly paired with udon, and it has also been commercialized by a group of fishing-village women.
- When it is eaten
- Because simply adding gomadashi easily makes a flavorful dish, it is eaten regularly; many restaurants serve it, and people eat it like fast food.
- How it is eaten
- Gomadashi, made by adding soy sauce, sesame, and mirin to grilled and flaked eso (lizardfish), is placed on kake udon and eaten. Gomadashi is also used for ochazuke and as a dipping sauce for somen.
