Dish profile

About this dish

Main ingredients
wheat flour, carrot, naganegi (Japanese long onion), daikon radish, shiitake mushrooms, potato, taro
History and origin
The name is said to come from rolling the noodle dough around a rolling pin and making "kirikomi" (cuts) in it with a knife. It is thought to have begun to be enjoyed as an everyday staple from around the mid-Edo period, when stone mills spread among ordinary people, and in 2014 "Gunma's Flour Food Culture: Okirikomi" was selected by the prefecture as an intangible folk cultural property for which measures such as making records should be taken.
When it is eaten
It has been eaten as an everyday staple. There are no set rules for the thickness of the noodles, the vegetables, or the seasoning, which vary from household to household, and seasonal ingredients are sometimes used to enjoy the flavors of the season.
How it is eaten
Unsalted wide noodles are simmered as they are, without boiling, together with vegetables in a large pot. In one example recipe, they are simmered in a broth of niboshi (dried sardines) and katsuobushi (dried bonito flakes) and seasoned with soy sauce and miso.
