Dish profile
About this dish
- Main ingredients
- curly noodles, chicken carcasses, dark soy sauce, chicken chashu
- History and origin
- Chicken chashu is said to have originated shortly after the war, when relatively inexpensive chicken was used instead of pork, which was expensive. Because a delivery culture developed in this commercial town, low-hydration curly noodles that do not go soggy are said to have been used. Topping it with chicken skin is said to have become common only after the start of the Heisei era.
- How it is eaten
- Curly noodles are put in a rich-tasting, amber soup of dark soy sauce, and it is always topped with chicken chashu.
