Dish profile

About this dish

Main ingredients
sea bream (ohire clear soup), sashimi, yubiki (briefly blanched items), simmered beans, Nagasaki tempura, kakuni (braised pork belly), and other dishes made with seasonal ingredients
History and origin
It is said to have originated from dishes with which Chinese residents of the Tojin Yashiki (Chinese quarter) entertained Japanese and Westerners, and it is held that in Nagasaki during the period of national seclusion, Japanese touches were added to foreign cooking methods, resulting in a cuisine of Japanese, Chinese, and Dutch dishes. It appears to have come to be enjoyed at ryotei (traditional Japanese restaurants) in the early Kansei era (around 1790). "Taku" means dining table and "fuku" means tablecloth.
When it is eaten
It is hospitality cuisine enjoyed at Nagasaki ryotei and is also often incorporated into wedding receptions at hotels.
How it is eaten
The meal begins with a clear soup containing a sea bream fin, following the proprietress's greeting "Ohire wo dozo" (please have the ohire), and the toast comes after that. Small dishes such as sashimi and vinegared dishes, a medium bowl, a large bowl, simmered dishes, rice, fruit, and umewan (sweet red bean soup) follow, and each person takes portions from the large serving dishes onto small plates at a round table with no seats of honor or lower seats.
