Dish profile

About this dish

Main ingredients
medium-thick curly noodles, miso-based soup, spicy miso made with Akayu-grown chili peppers
History and origin
The Akayu spicy miso ramen served in Nan'yo City is an original menu item of a ramen shop, which is said to have developed and served miso ramen in the Showa 30s (1955–1964), when soy sauce ramen was the mainstream. The shop, which opened in 1958 (Showa 33), says that what led to the creation of "spicy miso ramen" was the idea of putting ramen into miso soup, which came to them while eating leftover dinner soup with miso added.
How it is eaten
Medium-thick curly noodles are put in the miso-based soup, and the spicy miso placed on top is dissolved into the soup as you eat.
