Dish profile

About this dish

Main ingredients
rice, ne-kombu (kelp root), seasoned vinegar, bamboo shoots, narazuke (sake-lees pickles), kabayaki-grilled mudskipper, thin strips of egg crepe, shiitake mushrooms, burdock root, carrot
History and origin
It is said that more than 500 years ago, local people, grateful to the lord of Suko who devoted himself to improving the quality of rice, made sushi with local seafood and mountain produce and presented it to him. It traditionally uses kabayaki-grilled mudskipper, but because mudskipper has become hard to obtain in recent years, shrimp, konoshiro (gizzard shad), or other ingredients are sometimes used instead.
When it is eaten
In the Suko district, it has been a feast for festivals, for entertaining visitors to Anpukuji Temple, and for welcoming daughters returning home, and even today it is served to guests at local festivals and celebrations.
How it is eaten
Ingredients are heaped on vinegared rice scored into squares, garnished with finely chopped mitsuba and red pickled ginger, then cut with a spatula and eaten.
