Dish profile
About this dish
- Main ingredients
- flat straight noodles, clear pork broth made by simmering pork, dark soy sauce tare, chashu, green onion as a condiment
- History and origin
- A shop founded in Kanda, Tokyo, in June 2020 is said to be its origin, and on New Year's Day 2022 the mutual aid organization "Chan Noren Kumiai" was established, based on study sessions with shops that founding members had opened in Shinjuku and Ikebukuro. The nickname "Chan-kei" (Chan-style) reportedly took hold because many of the shops have names ending in "-chan."
- How it is eaten
- Piping-hot soy sauce soup is poured into the bowl to the brim, and the flat straight noodles are served topped generously with green onion and tare-soaked chashu.
