Dish profile

About this dish

Main ingredients
medium-thin Chinese-style noodles, pork-bone and chicken-bone stock, soy sauce tare, lard, chopped onion, chashu, menma
History and origin
It is said to have begun in 1959, when a delicatessen in front of Kitano Station moved to Koyasu-cho and started a ramen specialty shop, devising a way to tone down the sharpness of onion with lard, based on a ramen with chopped onion encountered on a trip to Hokkaido. It spread locally under the name "Hachioji Ramen" in the 1980s and 1990s.
How it is eaten
Clear lard covers the surface of the soup made with soy sauce-based tare, and chopped onion is added as a topping. The lard is said to tone down the onion's sharpness and bring out its sweetness.
